Is that normal for the oil temp needle to be there

Mine typically sits right at ~190 - 200 (always a bit to the left of 210). This is in New England/northeast.

Am I just babying the car too much?

Yep, they changed the scale later to make it 250 right in the middle. Normal.

Hmm.. now I have to go check again.. maybe mine is actually 250 in the middle as well. All I remember is that the needle is always just to the left of it when fully warmed up.
