Why is that , sometimes the mini display, background color is red, and sometimes is white?
What is the criteria, why?

Depends if the car thinks it's dark or light outside.

Not sure if it coupled to the (auto) headlights or independant of that.

same as climate control,
goes orange during the night to be less disturbing to eyes.

in e46 was managed by an optic sensor on the dash, i suppose same in the other models..

not related to the lights, the headlights are on, or off.
