Love that Anova! Tonight is curry, steamed veg. Yesterday was a good one, smoked a pork belly for 90 minutes, then slow cooked it in the oven for three hours. YUM. I have been watching Guga on YouTube and just love the cooking. He has two channels.. Sou Vide everything and Guga Foods. Great Brazillian who is now in Miami.

Dumplings in the style of Rome No pictures. The flavor and texture were 10 out of 10. Aesthetics were 3 out of 10, thus no photos. Semolina Milk Parmesan Eggs Butter Nutmeg Salt Sage Cook semolina in milk, butter, salt and nutmeg to a thick porridge. Remove from heat and add parmesan and eggs, beating swiftly. Spread onto a baking sheet lined with plastic, cover with a second piece of plastic, and chill. Cut into rounds using a cutter, place in baking dish and garnish with sage and melted butter. Kasuri Murgh Malai with aromatic basmati rice
An incredible chicken curry with aromatic rice. This is the best Asian food item I have made. Recipe from Spice Eats on YouTube. Cooking with whole spices (cinnamon, mace, cloves, cardamom) is a revelation. Flavor and aroma in the nth degree. Kasuri Murgh Malai (all from scratch) - cinnamon - cloves - black cardamom - green cardamom - onion - garlic and ginger paste - salt and pepper - turmeric - garam masala - coriander powder - kasoori methi (dried fenugreek leaves) - cashew paste - tomato sauce - yogurt - cream - butter - chicken Aromatic basmati rice - aged long grain basmati rice - bay leaf - black cardamom (game changer!) - cinnamon - mace (game changer!) - salt - butter Last edited by chassis; 03-04-2021 at 09:16 PM.. |

I know, right? I’m early in my curry career and still building up my chops and nerve to post photos. Next time.
Curry items I’m getting confident with: Chana masala - chickpea stew Aloo Gobi - potato and cauliflower stew Kasuri murgh methi - chicken curry stew Next is a dal (lentils) of some kind and a biryani (rice entree).
