I was merely responding to your tasteless comment- which I'm sure this dish is not, pot roast or stew. Why does it matter? If TX and his family enjoyed it and the man is proud of his effort and wanted to share it with us, why be so critical? If he could teleport me portion of that meal, I'd sure as hell eat it - couldn't care less if he called it pot roast or stew.

Pot roast is NOT stew. Prepared properly, it is not even close to stew.

True. And I see that this particular one was prepared using a true Roasting method as opposed to steam, broth, etc. Both tasty in their own right. But when I think of Pot Roast, I definitely picture it as I prepared it. Once it hits the plate, there's just the chunky veggies and chunks of melt in your mouth beef. The broth stays in the pot unless of course you care to soak it up using some rolls.

True! Even when made in a dutch oven, pot roast is cooking in a few inches of water, beer, & stock (& steam).
Granny used to tell me, "burn it more".

I love TX, always defended his right to post what are, tbh, duplicate threads, but he does it with such verve I like them. I just legit cannot figure out what the slow cooker is good for other than for keeping sauces warm at family buffets.

Slow cookers are easy to use, retain moisture well and often can hold a lower temperature than most people’s basic ass ovens. Lower heat over a longer period of time breaks down tougher cuts better than higher heat for less time. Some people don’t have time to mind an active oven for hours - slow cooker you prep, load, set and forget. I’d rather leave the house with a slow cooker on than my oven.

You gonna hate on sous vide too while you’re at it?

There are pros and cons for all methods.

Slow cookers definitely don't produce 'tasteless' meals, but sure the flavor will not be as well developed as the cast iron + braise method. But what are the pros? Much quicker set up time, and you'll get softer, more tender meat.

I'm not a Masterchef I value my time, and so slow cookers are great for that purpose. If I want an expertly prepared meal I'll go to a restaurant.

See my issue is the set up time is longer. I am now dealing with two pots, not one so there is more clean up.
