Hmmm... I guess it depends if you mean like live when those shows were on the "air" or now that we can stream them all. I have horrible memory so I probably couldn't say which ones I watched the most back in the day.
However shows that I have watched a lot of and know for a fact I have probably watched every episode at least once.

- Star Trek (starting from next gen forward, could never get into the original)
- X-files
- Fringe
