If you did remove the USB dongle too soon, whilst it may show as being the 2020-2 version, in reality I think it will not have updated properly. Whilst this is pure supposition on my part, I wonder if some of the mapping might have become corrupted if the update wasn’t given time to properly transfer.
If you still have the downloaded/extracted data on the USB I’d try putting it into the car again and turn on the ignition to see if the update restarts. Then leave it until it’s done it’s stuff.
