I'll take a light-weight, nicely balanced 200 - 250 HP car that I can drive 300,000 miles with not much trouble over a 700 HP launch machine.

Life is too short to own the same vehicle for 300k miles. But your car does exist, used, for cheap.
Take '16-18 Miata, add Edelbrock Supercharger or BBR turbo, wheels/tires/suspension............enjoy.
Of course if you wanted to track it you'd need to add brakes and cooling for engine/trans/diff, but that's a different story.
