I've used Victorinox for 10 years or so, after having used Wusthof prior to that. The V-nox won the "Best Chef's Knife" review from America's Test Kitchen (maybe it was still Cooks Illustrated then) against a lot of expensive knives. I have huge hands, and the V-nox grips are outstanding. I use whetstones and I can get them shaving-sharp with ease, though getting an initial 10-degree edge on them took some effort.
